Prep time: 20-30 minutes     Total time: 50 minutes     Serves: 2

1/3 cup lentils

1/2 cup chopped carrots

2/3 cup chopped onion

2 1/2 cups chopped mushrooms

1 clove garlic

1/4 teaspoon pepper

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

1/2 tablespoon tomato paste

3 tablespoons Worcestershire sauce (vegan)

Sauce Ingredients

1/2 cup mushroom or vegetable broth

1/4 cup red wine (vegan)

2 table spoons Worcestershire sauce (vegan)

1/2 teaspoon onion powder

2 tablespoons apple sauce

1 tablespoon cornstarch

1/4 teaspoon pepper

  1. Preheat your over to 350 degrees fahrenheit.
  2. Add 1/3 cup lentils and 1 cup of water to a pan and bring to a boil. Reduce heat to a simmer and cook for 15-20 minutes.
  3. While the lentils are cooking, roughly chop the carrots, onions, and mushrooms.
  4. Fry the carrots, onions and mushrooms over medium high heat until most of the water has evaporated from the mushrooms and the onion is translucent.
  5. Add the cooked lentils, vegetables, garlic, pepper,  onion powder, smoked paprika, tomato paste and worcestershire sauce to a food processor. Blend on a low setting until the mixture is combined, but not completely smooth.
  6. Form the mixture into balls about one and a half inches in diameter.
  7. Bake the lentil balls for 20-30 minutes, or until slightly browned.
  8. While the lentil balls are baking, add the mushroom broth, red wine, worcestershire sauce, onion powder, apple sauce, cornstarch and pepper to a saucepan.
  9. Whisk the mixture together and place it on the stove over a low heat. Stir the mixture until it has thickened.
  10. Serve the meatballs with sauce over mashed potatoes or stuffing for a hearty meal. Enjoy!

  1. This dish isn’t even vegetarian, let alone vegan if you are using regular Worcestershire sauce, due to one of the constituent ingredients being fermented anchovies.
